Soda is... harmful. I expect regulation of it within the next twenty years on a par with cigarette labels in the 80's.
I have an eggplant curry that is my go-to for eggplant disposal when it's not ratatouille season. It's pretty easy and reasonably healthy, if you eat spicy hot stuff.
